1 serving of veggie crustless quiche. I ate this with 1 TB sriracha hot chili sauce and 1 C FF milk |
Crustless Quiche
(I made this up as I went, so hopefully I remember everything)
Ingredients:
- 1 zucchini
- 1/4 asparagus bunch
- 1 cup broccoli
- 1/2 red onion
- 1/2 sweet white onion
- 1/2 green onion stalk
- about 3 TB olive oil
- fat free shredded cheddar cheese
- 5 egg whites, 3 whole eggs
- Season with garlic salt, lemon pepper, sea salt, black pepper, red pepper flakes.
- Preheat oven to 375*
- Spray glass casserole dish with pam (I used olive oil pam)
- Slice 3/4 zucchini into thin oval pieces, lay in bottom of dish like "crust"
- Top zucchini with 1/4 C fat free cheddar
- Saute remainder of zucchini and all other veggies (chopped small) except green onion in pan with 3 TB olive oil and seasonings.
- Place veggies over the zucchini & cheese "crust"
- Blend eggs (I think I did 5 egg whites and 3 whole eggs)
- Pour eggs over veggies
- Top with 1/2 C fat free cheddar cheese and green onion
- Cook covered on center rack for 35-45 minutes until eggs are thoroughly cooked
This looks good! I am going to make it...minus the cheese! :)
