Haven't tried it yet -- will have some in the morning for breakfast! It smells amazing! |
- 2 servings ground lean turkey breast (8 oz raw or 5-6 oz cooked)
- 6 egg whites
- 3 whole omega eggs
- 1/2 cup fat free cheddar cheese
- 1.5 TB olive oil
- 1 small zucchini
- 1/2 sweet white onion
- 1/2 purple onion
- 1/2 stalk green onion
- 1/4 cup pico de gallo
- 1/2 cup chopped cilantro
- 1/4 cup chopped green onion
- 1 cup raw spinach
- 1/4 C pickled jalapeno slices
- Seasoned with: garlic salt, chili powder, lemon pepper
- Pre-heat oven to 375*
- Brown turkey breast in skillet with a spray of olive oil Pam & chili powder
- Drain turkey to remove all excess fat/liquid
- Spray casserole dish lightly with olive oil Pam
- Slice 3/4 zucchini into slices and place on bottom of casserole dish like "crust"
- Sprinkle 1/4 C cheese over zucchini
- Lay out spinach leaves over cheese and zucchini
- Dice remainder of zucchini, white onion, purple onion and throw into pan (sprayed lightly with Pam)
- Add pico de gallo to pan
- Brown veggies with seasonings
- Drain any excess liquid off of veggies
- Spread Turkey evenly in casserole dish over spinach
- Add browned veggies on top of Turkey
- Blend eggs with 1.5 TB olive oil
- Add blended eggs & oil to casserole dish
- Top egg mixture with chopped cilantro & green onion, jalapenos, and remainder of cheese
- Bake 35-45 minutes at 375* until thoroughly cooked
